Fall is officially in full-swing and our weekdays are packed to the brim with kid’s activities! Many nights of the week we enjoy crockpot meals. I often serve something that I previously prepped and froze. One of my current go-to dishes is a basic Skillet Chicken that I serve with Cilantro Lime Sauce.
You can leave a few pieces of chicken plain if you have picky eaters joining you at the table. In about 30 minutes this yummy dish will be ready to enjoy.
Skillet Chicken with Cilantro Lime Sauce is versatile and pairs well with so many sides.
We recently enjoyed it with a doctored-up Jiffy cornbread topped with Chipotle Lime Vitality Butter and Cabbage Corn and Tomato Salsa from Valentina’s Corner .
I prepped the salad ahead of time to let the flavors meld.
Another thing I love to do when cooking, is to bring a similar flavor from dish to dish to tie the whole meal together. This time, I was able to accomplish this by using Lime Vitality Essential Oil in most of the recipes.
I prefer cooking with vitality essential oils whenever I can for a few reasons:
1.The flavors from the essential oil are more potent and flavorful.
I found I use less essential oils in my recipes (than if I used fresh produce). This means a little bottle of vitality essential oil goes a really long way. Typically 2-3 drops is all you need!
2.Less wasteful.
Have you ever bought an ingredient or spice and needed it for just one recipe, only to have the remainder go to waste or sit unused in your cabinet? Since vitality oils from Young Living do not expire, I end up saving money by using them over and over again. Dry herbs and spices expire.
Here are the recipes for one of our favorite family weeknight meals!
Skillet Chicken with Cilantro Lime Sauce
Ingredients:
-4 skinless boneless chicken breasts
-¼ teaspoon salt and ¼ teaspoon pepper
-1 Tablespoon olive oil
-1 cup organic, reduced sodium chicken broth
-¼ cup finely chopped onion
-1 Tablespoon chopped cilantro
-3 Tablespoons full-fat milk or heavy cream
-2 Tablespoons butter
-5 drops Lime Vitality Essential Oil (or substitute 1 Tablespoon fresh lime juice)
-½ teaspoon red pepper flakes or chipotle seasoning (optional, adjust as needed for desired spice level)
How to Make Skillet Chicken with Cilantro Lime Sauce
1.Trim chicken breasts for even size and thickness.
2.Sprinkle each with salt and pepper.
3.In a large skillet, heat the oil over medium-high heat. Add the chicken and cook for about 6-7 minutes until chicken is cooked about half-way through.
4.Flip chicken and finish cooking the other side.
5.Remove chicken from skillet and set on plate (cover with foil to retain heat).
6.To the skillet add broth, onion and peppers (if using). Cook for a few minutes until onions become soft and liquid is reduced by half.
7.Add cream and butter to skillet and cook until sauce thickens. Then add the vitality essential oil and cilantro.
8.You can add a few more drops of essential oil if you want more of the lime flavor.
Serve cilantro lime sauce over cooked chicken.
Doctored-Up Jiffy Cornbread with Chipotle Lime Butter:
For the cornbread
Ingredients:
-2 boxes Jiffy Cornbread Mix
-2 eggs
-1 can creamed corn
-milk
Directions:
1.Follow directions on the back of the cornbread box, adding 1 can of creamed corn to your batter. Add enough milk to create a smooth and creamy batter (not too thick and not too runny!).
2.Bake according to package, adding a little extra cooking time if needed due to the addition of the creamed corn.
Chipotle Lime Vitality Butter:
Ingredients:
-¼ cup butter (we prefer Kerry Gold brand)
-1 teaspoon Chipotle seasoning (more if you prefer there to be more spice)
-6 drops Lime Vitality Essential Oil (more for a more intense lime flavor)
Mix all ingredients together until butter is smooth and creamy.

Wow I never thought to use essential oils in cooking before! Cool, thanks for the tip 🙂
As long as your essential oils are the Vitality kind, you are good. They are so handy! Not all essential oils are safe for cooking though, so be sure to check with your company or get them from Young Living.
I’m not much on cilantro, but we might give it a try!
I am a fan of cilantro, but I would love to know what you think of this. Maybe substitute parsley instead?
