I love salad! It took me a few years to get there, but now salads show up almost daily in my lunch and dinner routines. I love them because they are versatile and easy to customize. They can be made to feed just one person or serve a whole crowd. Many healthy salad recipes can even be made ahead of time.

Here are a few things to keep in mind before you chow down on your salads:

1.Be mindful of your toppings.

Lettuce, spinach, and kale are low in calories, but the goodies you put on top of them are not. Feel free to load up on the veggies, and add nuts, cheese, dried fruits and meats in reasonable portions.

2. Dip instead of drench.
